Actually it depends on what your site is geared toward. Most average home users are viewing at 800x600 liek Mishy stated. In fact most do not even know how to change that or that it can be changed.

However if you are specifically designing your web site for savvy computer users that will have some technical skills before coming to your site, you may be able to get away with 1024x768.

The global stats from thecounter.com - in a nutshell loads of 800x600, a decent number of 1024x768, not that many 640x480.
